always love sampling the local treats of each
country I visit as odd as they may
sometimes be. Europe is no
exception. Food and wine are not only an
important part of the culture and daily lifestyle
in many European countries, but they are
also
what attract visitors from across the globe.
This is understandable as the cuisine
throughout Europe is not only varied, but
simply delicious. Wherever you wander you
can rest assured you will find a delicacy to
tickle your taste buds and have you repeating
the words of Oliver Twist, "Please sir, can I
have some more?" We're happy to inform

Cozido à
Portuguesa
Cozido is one of the most popular typical
Portuguese dishes with an interesting
traditional preparation method. For
generations, islanders have prepared this
hearty meal by venturing to hot springs and
slow cooking all contents in a large pot
buried underground for about 6 - 7 hours. As
most of us don't have hot springs in our
backyard, fortunately the recipe can also be
cooked over a stove top. It might not be as
much fun to cook it this way, but it will still be
a very tasty dish and a favourite for any meat
lover.
2 lbs Beef Shin
1 lb Pork Ribs
1 lb Morcela Sausage
1 lb Chourico Sausage
8 oz Salpicao Sausage
1 lb Chicken
½ lb Bacon
10 -12 cups boiling Water
2 lbs Potatoes; pared
1 lb Carrots; scraped and thickly sliced
1 lb Turnips; pared and chopped into large
cubes
1 Onion; peeled and coarsely chopped
2 cloves Garlic, chopped
1/2 a Cabbage; quartered
3 Bay Leaves
2 cups rice
Salt and Pepper to taste
Put all the meat into a large stock pot, cover
with water, and bring to boil. Add onions,
garlic, bay leaves, and seasoning and
reduce heat to medium-low. Cover pot and
bring to simmer. Occasionally remove foam
that comes to surface. Test sausages after
approx 40 minutes, and remove when done
(set aside and keep warm.) Check
remaining meat during balance of cooking
time as not all meat may need the full 90
minutes of cooking time.(Set aside meat as
it is cooked and keep warm.) When all meat
has been cooked and removed, add
potatoes, turnips, cabbage, and carrots (if
the
broth has reduced down too much, add
water to ensure that the vegetables are
covered); add more seasoning if necessary.
Over medium-low heat, cook the vegetables,
covered, for about 20 minutes, or until
tender. In the meantime cook rice with some
of the broth from stew. When all the
vegetables are cooked, cut both the meat
and veggies into serving-size pieces and
place on individual soup plates; drizzle broth
over and serve with rice. Makes 6 - 8
servings. Bom apetite!

Dear Arts & Leisure Tours,
I just wanted to write and say thank you,
thank you, thank you for putting together a
wonderful trip for me and my girls.
Everything went off without a hitch and my
daughters were ever so delighted at the
accommodations you selected. They were
perfect and all in great locations. We
especially liked our country villa. It was so
beautiful. The setting was marvellous and we
had a ball together just us girls.
The shopping excursions you put together
were great too. We picked up some
fantastic deals at the Gucci and Prada
outlets. I couldn't believe how inexpensive
some of the designer stores were. I
purchased a few things at almost 75% off!!!
What a bargain! I even picked up a couple of
shirts and ties for Richard just so he wouldn't
think we had forgotten all about him. This
should hold him over until he sees the
charge card bill. But it was all money well
spent!
I think the highlight of the trip though had to
be our deluxe days of pampering where we
indulged in a couple of spa treatments and
had our cooking classes. The vinotherapie
treatments were soooo wonderful. A tub with
wine! Who knew? It was fabulous! I never
knew wine could be so versatile. And even
though I might not be of chef caliber just yet, I
did pick up some great tips on how to make
pasta the authentic Italian way. It was so
much fun. And the instructors were so kind
and patient with us. I'll send you a few
photos of the girls covered in flour as soon
as we get them back. We were all giggling
like school girls and it was such a delight to
have this time with my babies before they
head off to college in the fall.
It was truly a trip of a lifetime for all of us and
we can't thank you enough for making it
come together so easily and so perfectly for
us. I can honestly say there wasn't a single
thing I didn't enjoy. Even getting lost
wandering about Florence didn't phase us as
it was all just an adventure.
I hope to be able to plan another trip with you
all next year. Maybe a little romantic getaway
for Richard and I. I'll keep you
posted.
