Although this isn't a typical wedding cake, it's one of my favourites. This secret family recipe is my Mamma's best one. Everyone in the family loves it and it is the cake of choice for any celebration. I'm sure she won't mind me sharing it with oh say, a few thousand of my closest friends. ;)

1 package (400gr) of Italian Lady Fingers (Savoiardi)
1 container of Mascarpone Cheese (500 gr)
3 eggs (separated)
6 tbsps granulated sugar
2 3/4 cups sweetened espresso coffee (cooled)
cocoa powder

Beat egg yolks with 3 tbsps of sugar until creamy like a pudding. In a separate bowl whip egg whites with remaining 3 tbsps of sugar until peaks begin to form. Beat mascarpone cheese into egg yolks until well blended. Fold in egg whites. Soak cookies in coffee and begin to layer onto a cake dish. (You may want to add a few tbsps of vanilla flavoured Cognac or Kahlua into the coffee if you like). Spread on a layer of cream after each layer of soaked savoiardi. Sprinkle with cocoa and repeat until all cookies and cream have been used up. Set in fridge overnight or for at least 3 hours before serving. Auguri!

I have to admit it was a tough one for me this time as there are so many stunning places to choose from.
